Blanquette - French stew

This is a traditional French recipe. Blanquette is a French stew. In the classic version of the dish the meat is simmered in a white stock and served in a sauce velouté enriched with cream and egg. It is still among the most popular meat dishes in France.


You can substitute veal with pork loin, it's delicious!


Ingredients:

1kg of meet (for 4 people) veal or pork loin

Crème fraîche 20 cl

6 Carrots

2 Leeks

2 Bay leaves

Thyme

Celery or celery powder

Olive oil

Water

Salt


Directions:

  1. Cut the meat into small pieces and remove any excess fat

  2. Sear the meat into a dutch oven with olive oil

  3. Cover with water

  4. Add 1 leek cut into small pieces

  5. Add the carrots cut into small pieces

  6. Add the celery cut into smal pieces

  7. Add the bay leaves and the thyme

  8. Let the stew simmer for 2 hours

  9. Remove excess broth and fat

  10. Add the crème fraîche and the remaining leek 20 minutes before the end of cooking

  11. Serve with veggies and rice or potatoes

I found this stew after watching one of your YouTube videos. I hesitated about using water instead of broth, but the result was so flavorful! Will make again for sure. I look forward to trying more of your recipes!

Thank you very much! Regarding the broth, actually adding broth is not necessary because the meat will release its own broth as it cooks, and with the herbs it will be flavorful. Have a nice day 🙂
