Blanquette - French stew

This is a traditional French recipe. Blanquette is a French stew. In the classic version of the dish the meat is simmered in a white stock and served in a sauce velouté enriched with cream and egg. It is still among the most popular meat dishes in France.
You can substitute veal with pork loin, it's delicious!
Ingredients:
1kg of meet (for 4 people) veal or pork loin
Crème fraîche 20 cl
6 Carrots
2 Leeks
2 Bay leaves
Thyme
Celery or celery powder
Olive oil
Water
Salt
Directions:
Cut the meat into small pieces and remove any excess fat
Sear the meat into a dutch oven with olive oil
Cover with water
Add 1 leek cut into small pieces
Add the carrots cut into small pieces
Add the celery cut into smal pieces
Add the bay leaves and the thyme
Let the stew simmer for 2 hours
Remove excess broth and fat
Add the crème fraîche and the remaining leek 20 minutes before the end of cooking
Serve with veggies and rice or potatoes
