Fork-Tender Pork Stew with Tomato sauce

Ingredients (4 people)
800 gr of pork loin (around 1,7 pound)
2 cans of tomatoes (400 g net weight each)
Bay leaves
Thyme
Carrots (2 per person)
Celery
1 leek
Olive oil or butter
Directions
Cut the meat into small pieces
Brown it in a dutch oven with olive oil
Pour in the tomatoes and add water to cover the meat
Add the bay leaves and the thyme and mix well
Add the chopped celery
Chop the leek and add it as well
Chop the carrots and add them
Mix everything together
Let this simmer for 2 hours at low temperature
Serve with potatoes or rice. It's even better reheated the next day. However, if you do this set some of the sauce aside, otherwise the meat will absorb all the sauce and it will be dry.
