French Poulet basquaise (chicken)

Ingredients:


Chicken thighs (1 per person)

1 can of Diced tomatoes

Herbs (thyme, bay leaves, oregano, rosemary)

White wine (1 small glass)

2 to 3 Bell Peppers

1 or 2 Onions



Directions:


  1. Brown the chicken in a Dutch oven with olive oil

  2. Chop the bell peppers

  3. Add the bell peppers & herbs to the chicken

  4. Add the wine and 2 glasses of water.

  5. Let simmer 30 to 40 minutes.

  6. Afterwards set aside the sauce

  7. Roast the chicken in the oven until it's crispy (about 20 to 30 minutes at 230°C / 450°F)

Hi Diane. I really like your chicken Basquiese. I envy you for the quality of chicken available in france. Nothing like it in the states unless you’re fortunate enough to know of an organic free range poultry farm.

I intend to make this recipe but would you please tell me what the canned tomatoes are for?
